What is a guachinche?
This is the name given in Tenerife to those informal restaurants serving traditional, home-cooked food that offer home-grown wine .
Originally, they were private houses located in the midlands of northern Tenerife. They sold the wine they made and offered visitors something to eat.
Nowadays, guachinche is understood to be any restaurant or simple food house that offers local wines and traditional Canarian food at affordable prices.
Types of guachinches
The traditional guachinche is an informal, simple and austere establishment that offers typical dishes of Canarian cuisine and offers wines either produced by the restaurant itself or from local producers.
The modern guachinche offers traditional dishes and reinterpretations of some of them, adapting them to new trends or to the taste of the chef, while offering a wider range of dishes and drinks. These establishments are usually better equipped and decorated, although they maintain the essence of being a popular place with affordable prices.
On the other hand, there are bars and restaurants on all the islands whose offer is based on preparing traditional, home-made food. We have also included these types of establishments on guachinches.es
Are guachinches only found in Tenerife? And in the rest of the Canary Islands?
The term guachinche itself comes from Tenerife, although it has spread to several of the islands. Similar concepts exist in the rest of the Canary Islands, such as bolinche or bochinche in Gran Canaria, or teleclub in Lanzarote.
In any case, in all the Canary Islands there are simple, affordable restaurants and establishments, serving traditional Canarian food, with local wines and products. These types of places where you can eat and taste Canarian cuisine are the ones we have tried to add to our website.
What kind of food is served at guachinches? What dishes should I order?
In many of them you will find dishes that you can order as a starter or to share, such as: wrinkled or stewed potatoes with mojo sauce, fresh or roasted Canarian cheeses, chickpeas, ropa vieja, escaldón (made from gofio)…
As for meats, some typical dishes are carne fiesta, goat meat or meat in sauce. If the guachinche is specialized in grilled meats, you will surely be able to find chicken, pork or beef tenderloin, Iberian pork, bichillo…
If the guachinche is more coastal and specializes in seafood , they may offer fresh fish such as grouper, squid, pollock or sardines, to name a few. In addition to cuttlefish, squid, limpets, shrimp, moray eels or cod in onion sauce.
It is also common to find dishes that come from Spanish cuisine but are deeply rooted in the Canary Islands, such as croquettes, potato salads, salads, dressed tomatoes, fabadas, paellas and rice dishes…
And of course, if you drink alcohol, we recommend that you try the house wine , or order some of the wines from renowned wineries on the islands. The red wines and fruity whites are particularly popular.
